I have put up beadboard wallpaper and although it wasn't self adhesive it was easy to put up and camouflaged a rough wall. If it's a real wood tongue and groove paneling I personally would hate to cover it up. What about a white wash to lighten it up? I know you said you didn't want to paint but it would still give you the wood but lighter.
